We make a point of using seasonal produce locally made, farmed, grown, caught. Whenever possible we source spray free, free range organic food. Special focus on fresh locally landed, hand selected fish to minimize transport and ensure freshness.
We purchase the odd piglet, cattle beast or lamb, whom we personally know (or at least the farmer).
Within that frame we intend to remain transparent in our approach by writing simple menus that reflect the traditions of classic cuisines.
